Tyrozouli cheese is a traditional Cretan cheese celebrated for its distinct flavor and rich texture. Its preparation has been deeply rooted in the daily lives and dietary habits of Cretans for centuries, making it one of the oldest cheeses on the island.
From Past to Present | The Story of Tyrozouli Cheese
The history of tyrozouli stretches deep into the past, when people used excess milk from their livestock to create long-lasting cheeses. Traditionally made from sheep’s or goat’s milk, it came from family-owned animals kept in household courtyards or cellars.
Due to its homemade production, it was often called “the homemade” or “the cheese of the home” in many Cretan regions. In some areas, it is also known as “anthotyro”, as it is considered the “flower of cheese”.
Traditional Craftsmanship | Timeless Cretan Techniques
The traditional process of making tyrozouli remains unchanged over time. The fresh milk is heated and curdled using natural ingredients like vinegar, lemon, or fig sap, depending on the season and local tradition. It is then placed in molds and drained to remove excess moisture, preserving its pure, authentic flavor.
